Baked eggs and smoked salmon

Ingredients

  • Butter for greasing the ramekins
  • 2oz Smoked salmon
  • 1/2 a small tub of double cream
  • chopped chives
  • parmesan cheese
  • eggs
  • pepper

Directions

  1. Grease the ramekins with the butter and line with some chives, then put the salmon in the bottom.
  2. Add the half the double cream to cover the salmon in each ramekin and a little bit of ground black pepper.

Now here’s the choice part…
I make a little bit of scrambled egg still a bit runny and then put that on top of the salmon, my boyfriend prefers the whole egg on top of the salmon……

  1. Then divide the rest of the cream between the ramekins and sprinkle with some more chives and the parmesan.
  2. Bake in a bain marie (place the ramekins in a large dish with hot water half way up the side of the ramekins) for about 15mins @ 180 deg C.  Serve with hot buttery toast.

Very decadent.
